Nicolas Rossignol has been quietly making wine for 25 years in Burgundy from the absolute best parcels of Volnay and Pommard. He is the 5th generation from a line of winegrowers from Volnay. After graduation from Beaune wine school, he worked at various domains around France including Domaine Joseph Voillot in Volnay, Domaine Louis Latour in Ardèche, as well as at Domaine du Vieux Télégraphe in Châteauneuf-du-Papa.
Since 1994, he has been making wine with Domaine Rossignol-Jeanniard across the appellations of Volnay, Pommard, Beaune, Aloxe-Corton and Pernand-Vergelesses. In 2005, he added Savigny-les-Beaune 1ers Crus "Aux Fourneaux" and 1er Cru "Les Lavières", as well as a plot of Beaune 1er Cru "Clos du Roy", from the Robert Ampeau estate in Meursault. Then, in 2011, the Rossignol-Jeanniard and Nicolas Rossignol estates merged. They adopted the “Domaine Nicolas Rossignol” label with nearly 30 different appellations over twenty hectares. He also has a project in the Beaujolais that I will bring in in 2026.
Nicolas is known for his meticulous approach to viticulture and vinification. Emphasizing biodynamic principles, he ensures that each vineyard parcel is managed to highlight its unique characteristics. Grapes are carefully sorted and handled minimally to preserve quality. In the cellar, Rossignol employs minimal intervention. Elevage lasts between 10-20 months depending on the wine and the vintage. He sometimes employs whole cluster fermentation, but it isn’t a given. The wines are aged on fine lees and never racked. Cask selection and malolactic fermentation are tailored to each vintage. The lunar calendar guides the timing of the elevage, and wine is bottled without fining or filtration.
Aligoté de Bourgogne
The Aligoté comes from two different vineyards with chalk soil – one called En Blanche in Pommard and another called Amerot in Volnay. Both vineyards were planted around 1933. The wine is fermented and aged in demi-muids and tank.
Bourgogne Chardonnay
This wine is from several vineyards in the Côte de Beaune with limestone-rich soils. It is fermented and aged in stainless on its lees.
Bourgogne Pinot Noir
This wine is made from a blend of different plots in Volnay and Pommard with an average vine age of 20 to 50 years.
Bourgogne Cuvée L’Héritière
Located in Crenilles, near the Château di Pommard, these old vines were planted in 1922 in soil with lots of stones and silt (Pommard is located in an old riverbed).
Savingy-Les-Beaune
This vineyard is located in the village of Savigny-Les-Beaune, under the 1er Cru Les Fourneaux. The soil is mainly clay, and the vines are 50 years old.
Pommard Noizons
This vineyard is north of the hill of Pommard, facing Beaune, above “Argillières” and “Epenots”. It faces directly south with clay soil. The wine comes from several vineyard plots whose vines range from 15 to 75 years old.
Pommard 1er Cru Argillieres
Argillieres is located mid-slope, just above Pommard Epenots, facing the town of Beaune. There is lots of iron (with clay) in the soil here, contributing to its name (argile=clay). It comes from two vineyard that are between 30 and 40 years old.
Volnay
This vineyard is at the bottom of the hill, one under the Premier Crus Clos des Angles and another under En Chevret. It’s a blend of different plots called Les Buttes, Les Grands Champs, Les Famines, and Les Lurets, which range from 10 to 60 years old.The soil has both chalk and clay soil set on a layer of chalk.
Volnay 1er Cru Mitans
Nicolas Rossignol is a fifth-generation Volnay grower known for biodynamic principles and precise vinification. His 2022 Mitans comes from 80-year-old vines on mid-slope clay-limestone soils, a site prized for its balance of finesse and depth. The vineyard sits at the heart of classic Volnay terroir.
The wine was fermented with 50% whole clusters over 16 days, then aged 17 months—first in barrel (25% new), then in stainless steel. It’s a structured, mineral-rich Pinot Noir with refined tension and aging potential. A benchmark Premier Cru from a standout site.
Volnay 1er cru Fremiets
Nicolas calls this vineyard “the most Pommard of all of Volnay” for its structure and soil type. The soild here is clay and chalk on top of a motherock of hard, chalky Jurassic soil with a high concentration of Iron. The soils of the middle-hillside are closer to the mother rock. The place is really warm (in a basin) and the maturity is precocious. The vines are about 20 years old.
Volnay 1er cru Santenots
This parcel is located in Santenots du Bas, at the same level of the hill as Ronceret. The beginning of the plot has a soft slope that breaks in the middle and then finish flat. There is very high iron content in the soil, with large round rocks mixed in. This is a blend of younger vines (20 years old) and older vines (60-70 years old) from Meursault with a clay soil.
Volnay 1er cru Caillerets
Caillerets is located right below Taillepieds. It owes its name to the rocks that form its soil. The soil is a mix of clay and chalk set on a hard chalky layer from the Jurassic era. This is a blend between 20 and 50 year old vines.
