Villbrygg was founded in 2018 in Norway by Vanessa Krogh and Cornelia Øiestad, who, during their time in the restaurant industry, discovered that there was a significant need for non-alcoholic alternatives that could match the complex flavors found in alcoholic beverages.

After years of research and experimentation, they developed and launched three sparkling botanicals. They started biking around to deliver their products to local restaurants in Oslo. Now, Villbrygg is an internationally recognized brand that is served at Michelin-starred restaurants across the globe.

They use only natural ingredients – either foraged or organic, with no artificial additives or preservatives. Their ingredients are collected in the wild forests or harvested from the farmer fields in a short window every year – a hectic period that lasts from May to September. All the plants are dried and stored throughout the year so that they have enough raw material to make their drinks during the winter months until the next season, when it all starts again. 

They do an infusion of different herbs and then a lactic fermentation, and each herb is infused separately. It’s not like a kombucha – it is a more controlled with a shorter fermentation so that there is no alcohol left.

Fjell
A sparkling, fresh, non-alcoholic beverage based on wild lingonberries, meticulously crafted with a infusion of birch leaves, rosemary, and lemongrass from Bergsmyrene Farm. It a perfect alternative to red wine without trying to be red wine.

Skog
This was their first creation. The aromatic flavors of the forest are extracted and captured in a bottle. Fermented infusion of spruce shoots, lemon grass, yarrow and birch leaves. A sparkling, fresh drink with notes of citrus, ginger and pine needles. The ingredients come from their network of Norwegian harvesters and farmers who cultivate in line with nature's premises.

Eng
Here they celebrate lush flower meadows. A sparkling, fresh drink with mature flavours. Notes of black tea, dried fruit, flowers, almond and citrus. ENG (Meadow) is a fermented infusion of the Nordic wild plants meadowsweet, fireweed and wweet vernal grass, collected by their network of knowledgeable foragers throughout Norway. It is combined with lemon balm grown on Linderud farm in Oslo.
